ReplyDeleteLisa, I finally got around to making my first batch of sugar this morning to prepare for some experimenting. Question: will it get thicker as it cools in the refrigerator? I cooked it (1 cup confectioner's sugar, 1 cup of water) 20 minutes at a low simmer, cooled on the stove then put in a container to refrigerate. It seems very runny to me, even after a couple of hours in the fridge. Should I try to heat it some more?
ReplyDeleteIt will get somewhat thicker. It is pretty runny - not nearly as thick as corn syrup or pancake syrup - more like maple syrup. It should work fine. If it is too thin, what may happen is that the water separates out and creates a halo effect. I actually love the look, but have only achieved it through serendipity.
